- Our oil is extracted directly from olives coming from traditional olive trees, with a frame (separation between olive trees) of 6x8 meters of distance that allows the sun to penetrate to the interior of the tree in a forest of 30 Hectares of olive grove. This "sunshine" allows our olives to obtain greater phenolic compounds and organoleptic qualities than oils produced in new plantations of more intensive cultivation format.
- Our estate has a programmed irrigation system, to obtain balanced and harmonious oils in its flavor, by the hydric regularity that we provide. We also obtain homogeneous campaigns in terms of production (average harvest) from which we obtain an oil of similar quality every year, which allows our client to identify us unequivocally year after year with a unique flavour.
- Harvested in the months of October and November, Soul is an AOVE obtained cold from the first extraction, made immediately from the harvest (a maximum of 3 hours between both processes), which allows us to maintain our own polyphenols in greater quantity.
- An oil of an intense green, fruity colour, with herbaceous tones, with slight bitterness and itchiness on the palate. The camomile variety allows for a longer durability of its connotations in time than other more common varieties in the area.
- Oil in which the oleocantal is present, an organic compound, present in some extra virgin olive oils, which is responsible for that spicy touch. Its main virtue is that this molecule has proven to be a natural anti-inflammatory with characteristics similar to ibuprofen.
