SOUL OLIVE is a project that is born from the earth to arrive at your table after a process of elaboration in which with care all the details have been taken care of from its origin.
For years we have been excited about the idea of producing our own Extra Virgin Olive Oil, natural and genuine, from a less common variety such as "chamomile", with a unique flavor, endowed with important nutritional properties so beneficial to our body.
Soul is a splendid juice from olives harvested in our traditional olive grove in Mendoza, located in the southern countryside of Jaen, near the city of Baeza. An AOVE result of a meticulous process of selection and production based exclusively on mechanical procedures.
Our campaigns are homogeneous in terms of production (half harvest). Year after year, we obtain a product of similar quality and taste that allows our customers to identify it.
It is an oil obtained in cold (that allows a greater conservation of its properties), of an intense green color, with a chromatic degree of between a 1,20 and 1,50 (being value 0 the intense green and 5 the black mature one). It is fruity with a herbaceous touch, being light, on the palate, its bitterness and spiciness. The variety Manzanilla allows a greater durability of its connotations in the time that other varieties but common in the zone.
